Shelf Stable Chocolate Frosting

- Powdered Sugar – 52.7
- Shortening – 11.3
- Water – 13.4
- Corn syrup – 2.7
- Dark Chocolate (melted) – 18.2
- Vinegar – 0.2
- GMO-free Sunflower Lecithin Sun 400 by Ciranda – 0.9
- SOR-Mate Natural Preservative by J&K Ingredients – 0.5
Method
- Place powdered sugar and shortening in a mixing bowl with paddle and cream on 1st for 30 seconds, scrape, then cream on 2nd for 1 minute.
- Add in corn syrup, vinegar, SOR-Mate and water and mix on 1st for 30 second, scrape, and then mix on 2nd for 1 minute.
- Add in melted chocolate and cream until smooth.
