Clean Label Yellow Cake

- Sugar – 28.95
- Salt – 0.17
- Egg – 9.93
- GMO free Sunflower Lecithin Sun 400 by Ciranda – 0.5
- Water – 19.85
- Chlorinated Cake Flour – 24.81
- Baking Powder – 0.83
- SOR-Mate Natural Preservative by J&K Ingredients – 0.91
Method
- Cream butter, salt and sugar on 1st for 30 seconds, scrape, then on 2nd for 1 minute, scrape.
- Add eggs and lecithin.
- Mix on 1st for 30 seconds, scrape, then on 2nd for 1 minute, remove paddle.
- Switch to wire whip.
- Add water, mix on 1st for 30 seconds, scrape, and mix on 2nd for 1 minute, scrape.
- Add in flour, baking powder and SOR-Mate, mix on 1st for one minute, scrape, then on 2nd for 3 minutes, target a specific gravity of 0.70.
- Bake at 350°F for 30 mins.
- Remove from the oven and cool on a wire rack.
