Consumers are looking to explore the world through culinary delights. From Middle Eastern tahini swirls in artisanal bread to Japanese yuzu-infused pastries, global flavors are taking over menus. At the Baking Expo, I’m excited to see how bakers are incorporating spices like cardamom, turmeric, and gochugaru into everyday treats, turning the ordinary into the extraordinary. Now, let’s not forget texture! Some recent developments include mochi-filled donuts or crispy feuilletine layered in delicate desserts. Talk about tasty!

Nostalgia with a Twist

While global flavors are rising, comfort foods remain timeless, but with a twist, of course! Brown butter miso cookies, pandan chiffon cakes, and chai-spiced babka are just a few examples of how bakers are blending familiarity with innovation. At this year’s show, expect to taste, test, and take notes on how to balance heritage and hype in your own creations.

I like to think of IBIE as a masterclass in the future of baking. From hands-on demos with global pastry chefs to supplier showcases featuring rare ingredients, this is where trends are born.
