In the United States, wheat flour tortillas are the fastest growing segment of the entire baking industry. That means that if you haven’t started producing tortillas, you definitely should be considering it. At the Baking Expo later this month, I’ll be on the lookout for ingredients that can be used in clean label tortilla applications.
Personally, I’m a huge fan of tortillas, not only because they are delicious but also because they are extremely versatile products and are suitable for virtually any occasion. Of course, consumers of today are looking for more clean label goods than they were in the 1980s and one way to get there is baking powders.

Many food manufacturers are turning to clean label leavening agents, like baking powder, to satisfy the needs of their customers shopping for healthier baked goods. The challenges of making tortillas with a short ingredient list that are also shelf stable can be mitigated by the right baking powder and formulation. Also, this ingredient helps give tortillas the right texture with desirable appearance, along with palatability.
