  • Flour – 100%
  • Water – 28.5%
  • Sodium Sulfite – 0.1%
  • Ammonia Bicarbonate – 2.5%
  • Allulose – 10%
  • Stevia – 0.05%
  • Mira gel – 2%
  • Tender-Jel – 2%
  • Shortening – 17%
  • Lecithin – 0.5%
  • Malt Extract – 0.2%
  • Promotose – 5%
  • Non fat dry milk – 2.5%
  • Salt – 0.8%
  • Sodium Bicarbonate – 0.6%
  • Vanilla Extract – 0.5%
  • Cocoa Fiber – 5%


 

Method

  1. Weigh the ingredients and mix through the bowl mixer @ low speed 1 around 15 mins until the dough reaches 40°C.
  2. Process the crackers through the cracker line.
