High Fiber, Low Sugar, Key Lime Muffins with Allulose

- Brown Sugar – 10%
- Allulose – 20%
- Stevia – 0.01%
- Shortening – 20%
- Baking Powder – 1.5%
- Lecithin – 0.25%
- Water – 50%
- Malt Extract – 5%
- Vanilla Flour – 10%
- Fresh Egg – 33.34%
- Cake Flour – 100%
- Fibersym – 11%
- Non fat dry milk powder – 2%
- Salt – 2%
- CMC – 0.15%
- Key lime – 5%
Method
- Weigh shortening and all ‘sugar’ and mix through bowl mixer at low speed 1 for 1 min and 30 s.
- Add water, vanilla flavor and fresh egg and mix through bowl mixer at low speed 1 for 45 s.
- Add all dry ingredients and mix through bowl mixer at low speed 1 for 30 s and change to medium speed 2 for 1 min.
- Set oven at 375°F and bake for 30 mins.
