Shelf Stable Chocolate Frosting


Ingredients

In Baker’s Percent: (%)

  • Powdered Sugar – 52.7
  • Shortening – 11.3
  • Water – 13.4
  • Corn syrup – 2.7
  • Dark Chocolate (melted) – 18.2
  • Vinegar – 0.2
  • GMO-free Sunflower Lecithin Sun 400 by Ciranda – 0.9
  • SOR-Mate Natural Preservative by J&K Ingredients – 0.5


 

Method

  1. Place powdered sugar and shortening in a mixing bowl with paddle and cream on 1st for 30 seconds, scrape, then cream on 2nd for 1 minute.
  2. Add in corn syrup, vinegar, SOR-Mate and water and mix on 1st for 30 second, scrape, and then mix on 2nd for 1 minute.
  3. Add in melted chocolate and cream until smooth.
