Ingredients

In Baker’s Percent: (%)

  • Butter – 14.06
  • Sugar – 28.95
  • Salt – 0.17
  • Egg – 9.93
  • GMO free Sunflower Lecithin Sun 400 by Ciranda – 0.5
  • Water – 19.85
  • Chlorinated Cake Flour – 24.81
  • Baking Powder – 0.83
  • SOR-Mate Natural Preservative by J&K Ingredients – 0.91


 

Method

  1. Cream butter, salt and sugar on 1st for 30 seconds, scrape, then on 2nd for 1 minute, scrape.
  2. Add eggs and lecithin.
  3. Mix on 1st for 30 seconds, scrape, then on 2nd for 1 minute, remove paddle.
  4. Switch to wire whip.
  5. Add water, mix on 1st for 30 seconds, scrape, and mix on 2nd for 1 minute, scrape.
  6. Add in flour, baking powder and SOR-Mate, mix on 1st for one minute, scrape, then on 2nd for 3 minutes, target a specific gravity of 0.70.
  7. Bake at 350°F for 30 mins.
  8. Remove from the oven and cool on a wire rack.
