What is Carrageenan Gum?
Carrageenan gum is a food grade water-soluble gum used for thickening and increasing the viscosity of food systems.
Extracted from red seaweed.
Water binding and thickening.
Use at low levels, 0.25% and lower, to aid in stabilizing icings or sauces. Disperse with
dry ingredients before use. Introduce to water solutions first for optimum hydration
before mixing with oil based ingredients.
