High Fiber, Low Sugar, Key Lime Muffins with Allulose

  • Sucrose – 10%
  • Brown Sugar – 10%
  • Allulose – 20%
  • Stevia – 0.01%
  • Shortening – 20%
  • Baking Powder – 1.5%
  • Lecithin – 0.25%
  • Water – 50%
  • Malt Extract – 5%
  • Vanilla Flour – 10%
  • Fresh Egg – 33.34%
  • Cake Flour – 100%
  • Fibersym – 11%
  • Non fat dry milk powder – 2%
  • Salt – 2%
  • CMC – 0.15%
  • Key lime – 5%

Method

  1. Weigh shortening and all ‘sugar’ and mix through bowl mixer at low speed 1 for 1 min and 30 s.
  2. Add water, vanilla flavor and fresh egg and mix through bowl mixer at low speed 1 for 45 s.
  3. Add all dry ingredients and mix through bowl mixer at low speed 1 for 30 s and change to medium speed 2 for 1 min.
  4. Set oven at 375 F and bake for 30 mins.
