      The basics of a soft cookie are using sugars that will not recrystallize easily.  This usually can include, invert sugar syrup, corn syrup, high fructose corn syrup, molasses, glucose, and sometimes some glycerin.

      for more detailed assistance, please share some formula and or product specifics.

      I am uploading an Excel file you can use to also easily scale for batch sizes.  Change the yellow cells to the cookie size and quantity you wish to make.

      This is a basic starting point recipe. Good luck!
