      We have a question for the Forum:
      Ask Dr. Lin Ep 7 on Artificial Preservatives: I need to give longlife to crispy biscuits.i need to keep them for more than 2 months perfectly savory and still crunchy.
      (Biscuits may be referring to terminology for Cookies or Crackers in America)

      Watch the water activity

      Make sure your biscuit is low in water activity, and keep it low by backing out the moisture, increasing solutes like sugar, honey and corn syrup. Introduce ingredients with higher glass transition temperatures like proteins and sugars.
