      I am working on a cake donut and will get to a place where I really like the performance of the donut but then I will repeat about 3 times and it will be totally inconsistent. Any reasons why this may be happening?

      Probably the translation is not quite 100, but I think I understand what you mean.
      If you always do everything the same when making the donuts. Then maybe you should check out other things.
      For example: do you clean the mixer and tools between each mix?
      And if so do you use soap for that?

      Soap is used to clean our equipment but this is happening when repeated on different days. Do you think there could be such inconsistency in our flour that it would act this way?

      Can you tell me what the recipe is and the method you use.
      And try to analyze what you do differently the second and third time.
      Look for little thinks.
