I have a very small home-based cookie business where I bake oatmeal chocolate chip cookies, my speciality being lactation cookies. I am at a stage right now where I’m ready to expand a little but my main issue is shelf-life. I am not willing to add chemical preservatives to lactation cookies which are consumed by breastfeeding mothers, so my route to expansion is proving to be rather tough.
I stumbled across this goldmine while researching ways to extend shelf life naturally (hadn’t even heard of “clean label” Before) I know quite literally nothing about commercial baking and preservatives or extending shelf life. But I have a background in chemical engineering so I am a fast learner and I love delving into the chemistry of things. If anyone can direct me to an article or web series or anything that talks about the basics of cookie shelf-life extension I would be extremely grateful. Thank you!
