I live in Mexico City (2300 masl). Does altitude affect the internal temperature of the bread? I have observed that, when baking bread weighing almost 1 kg, it does not reach 94 ° C – 95 ° C or more of internal temperature (I usually bake 20-25 minutes at 230 ° C, then I reduce to 200 ° C-210 ° C for 35-45 minutes), reaching at most 93 ° C.
