Sorry I should elaborate that a bit.  We are trying to make our artisan bread production more automated.  Our common bread sizes are 1lb, 1.5lb, 3lb, and 4lb.  These are proofed on simply a tray, in basket, in sandwich pan, or in baguette pan.  I see the M-NS being a good addition to our production.  But still, I would like to get our bakers off the bench away from rounding the bread by hand if possible.  Having said that, we are dealing with artisan breads.  So quality is very important to us.  Thanks so much.
