– even if you were to use 5% soy flour, with 100% water absorption ability you reduce cost even further than just the straight replacement.  You could take 10% wheat flour out and replace with 1/2 the amount of soy flour, without adjusting anything else.
Give that a try and let us know how it worked for you.
