Purple Wheat Bread
Ingredients
- Abel and Schafer Purple Wheat “Landbrot” Mix: 10 lbs
- Yeast, compressed: 4 oz
- Walnuts (optional): 2 lbs
- Water: 6 lbs. 8 oz
Method
- Mix all ingredients for 2-3 minutes on slow speed, then 5-6 minutes on fast speed. Incorporate walnuts at the end of mixing
- Bulk ferment for 35-45 minutes
- Scale at 20 oz. or as desired
- Pre-shape round
- Bench rest for 15-20 minutes
- Shape into oblong loaves or as desired
- Proof for 40-45 minutes at 90 ̊F/85% rh
- Bake at 420 ̊F for 30-35 minutes, depending on loaf weight
