Purple Wheat Bread


Ingredients

  • Abel and Schafer Purple Wheat “Landbrot” Mix:  10 lbs
  • Yeast, compressed: 4 oz
  • Walnuts (optional): 2 lbs
  • Water: 6 lbs. 8 oz

Method

  1. Mix all ingredients for 2-3 minutes on slow speed, then 5-6 minutes on fast speed. Incorporate walnuts at the end of mixing
  2. Bulk ferment for 35-45 minutes
  3. Scale at 20 oz. or as desired
  4. Pre-shape round
  5. Bench rest for 15-20 minutes
  6. Shape into oblong loaves or as desired
  7. Proof for 40-45 minutes at 90 ̊F/85% rh
  8. Bake at 420 ̊F for 30-35 minutes, depending on loaf weight
