Pizza Dough with Fermaid®


Ingredients

In Baker’s Percent: (%)

  • White Flour – 100%
  • Sugar – 1.5%
  • Oil – 3%
  • Fresh Block Yeast – 5%
  • Fresh PTY IDY – 3%
  • Fermaid Flex 1214E – 1.5%

Method

  1. Mix dough to full development.
  2. Scale 3 x 425 grams dough pieces and round.
  3. Sheet with Roll-Fix to 12 inches diameter and put in 12 inches pizza baking pans with plastic cover.
