- Salt – 2%
- Dry Yeast – 1.5%
- S500 Green – 0.5%
- Gluten – 2%
- Sapore Adelia – 20%
- Water – 56%
- Canola Oil – 2%
Method
- With mixing spiral, mix 5 minutes for the first speed then 5 minutes for the second speed.
- The dough temperature should be 75 – 78.
- Leave it for dough fermentation in about 10 minutes.
- The scale should be 14 oz.
- Intermediate proof in 10 minutes.
- The make up should be pan loaf.
- For the final fermentation, 90 minutes proofer at 95F, with 85% humidity.
- The oven temperature should be at 425F the dropped to 375F.
- Bake it for about 32 minutes.
