Gem of the West® Vital Wheat Glutens  

Gem of the West®  Vital wheat gluten – Produced by low temperature drying of gluten extracted from high quality wheat flour, this vital wheat gluten contains a minimum of 75% protein and has unique visco-elastic properties, making it ideal for a variety of baking and other food applications.

Organic Gem of the West® Vital Wheat Gluten – Isolated from certified organic, high quality wheat flour by natural wet-processing techniques and followed by a delicate flash-drying process. This product retains the vitality or viscoelasticity of wet gluten before the drying step. Organic Gem of the West® Vital Wheat Gluten provides strength and elasticity, increases volume, and improves the texture of organic breads, buns, dinner rolls and other yeast-leavened products. It also imparts firmness to organic pasta and noodles and is used to enhance the protein content of breakfast cereals and snacks.

GemPro® Wheat Proteins  

GemPro®   HPG – A natural, wheat protein isolate extracted from high quality wheat flour by a unique and proprietary process to yield a 90% protein product. It has a high degree of water absorption and exhibits strong viscoelastic properties. This highly functional protein is ideal for formulating a variety of bakery products, breakfast cereals, snacks and other food products. Applications include: weight management products, frozen doughs, flat breads, pastas, pizzas.

Organic GemPro® Extend Vital Wheat Gluten – A vital wheat gluten isolated from high quality, organic wheat flour by natural wet-processing techniques and followed by a delicate flash-drying process.  This product retains the vitality or viscoelasticity of wet gluten before the drying step. GemPro Extend® provides greater extensibility, making it ideal for sheeting products such as, pizza, flatbreads, and crackers.

GemPro®   DVG –  A devitalized wheat gluten isolated from hard wheat flour by a natural wet processing technique and followed by a high-temperature flash-drying process. The protein is heat-denatured thereby losing its vitality or viscoelastic properties.  GemPro™ DVG is ideal as a protein enhancer in a variety of food applications where strength and elasticity are not needed in the food product.

GemPro®   4400 – A wheat protein isolate prepared by a unique and proprietary process resulting in a product that imparts moderate elasticity and extensibility to dough systems. It improves the machinability of dough and imparts firmness to pasta products. GemPro™ 4400 is particularly useful as an egg white replacer in pasta and as a protein improver in bakery products resulting in enhanced machinability, increased volume and excellent texture. Applications include: whole grain baked/extruded products, biscuits, batters and breadings

GemPro®   3300 – A wheat protein isolate with 90% protein content prepared from wheat gluten by a unique and proprietary process yielding a product that imparts increased extensibility to dough systems. It possesses good binding and film formation properties. GemPro™ 3300 improves the machinability and relaxation of doughs, and enhances the structure, texture and protein content of bakery products, breakfast cereals, snacks and nutritional products.

GemStar®   100 LM – A low-moisture, native (unmodified) wheat starch isolated from wheat flour by unique wet processing techniques followed by a special flash-drying process. This product functions as a moisture-control agent in food products. GemStar™ 100 LM has general applications in bakery mixes, dry blends, breakfast cereals, snacks, and other processed foods.

GemStar®  200 – A highly purified, native (unmodified) wheat starch isolated from wheat flour by unique wet processing techniques followed by a flash-drying process. This product contains the typical distribution of large and small starch granules. GemStar™ 200 has general applications in bakery products, breakfast cereals, snacks, noodles and processed foods, including a variety of industrial products.

GemStar®  2800 – A modified wheat starch characterized by restricted granular swelling and high tolerance to extreme food processing conditions. It has specific applications in food products that are exposed to low pH, high shear or elevated temperature during processing where the swollen starch maintains its granular integrity. Applications include: cake donuts, snack cakes, variety of baked goods.

GemStar®  4100 – A modified wheat starch characterized by low viscosity and good binding properties. These properties make GemStar™ 4100 highly functional in coated food applications where adhesion is highly desired. Applications include: batters and breadings.

GemStar®  4200 – A modified wheat starch characterized by low viscosity and good binding properties and provides excellent crispiness. These properties make GemStar™ 4200 highly functional in coated food applications where adhesion and crispy textures are highly desired. Applications include: batters and breadings.

GemStar®  4500 – A modified wheat starch characterized by low viscosity and high adhesion properties and can be readily dispersible in cold water. It is specifically designed for batter and breading applications as in fried and coated foods. In fried foods, GemStar™ 4500 will improve color and flavor while reducing blow-outs. Applications include: batters and breadings.

GemGel® Pregelatinized Wheat Starch 

GemGel®   50 – An economical, pregelatinized native wheat starch produced by a unique drying process. This product hydrates instantly in water and generates lower viscosity than GemGel™ 100. GemGel™ 50 has general applications as an instant thickener in bakery products, breakfast cereals, snacks, other processed foods and a variety of industrial applications.

GemGel®  100 – A pregelatinized, native wheat starch produced by a unique drying process. This product hydrates instantly in water and improves the texture and tenderness of a variety of foods.  GemGel™ 100 has general uses as a thickener in bakery sweet good mixes, breakfast cereals, snacks and other processed foods.

GemGel®   100C – A coarse-granulation, pregelatinized, native wheat starch produced by a unique manufacturing process.  This product hydrates instantly in water forming a pulpy texture.  When formulated in food systems, it improves the cell structure, moisture retention and tenderness of the food products. It has general uses as a thickener in bakery sweet good mixes, breakfast cereals, snacks, and other processed foods

GemGel®   3300 A pregelatinized, modified wheat starch prepared by a unique drying process. This product is designed to hydrate instantly in water forming a highly viscous paste. GemGel™ 3300 is an excellent thickener with applications in bakery, breakfast cereal, snack and other processed foods such as soups, sauces and gravies.
