Ingredients
  • 2 C Vegetable oil
  • 2¾ C Sugar
  • 3 Eggs
  • 3 tsp Vanilla
  • 2½ C All purpose flour
  • 1 tsp Salt
  • 1tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 2 C Zucchini (shredded)
  • 1 C Walnuts
  • ½ C Milk
Instructions
  1. Preheat the oven to 375oF.
  2. Grease a bread pan.
  3. Mix the flour, salt, baking powder, baking soda and cinnamon into a bowl.
  4. Beat the oil, sugar, eggs and vanilla.
  5. Add in the flour mixture gradually.
  6. Add in the zucchini, walnuts and milk. Mix well.
  7. Pour the batter into the bread pan.
  8. Bake in the oven for 1 hour.
  9. Check with inserting a toothpick in the center of the loaf.
  10. The loaf is done baking when the toothpick comes out clean.
  11. Remove from the oven and cool on a rack.
